Crunchy Asian Slaw

I have made it known how much I love broccoli slaw for its taste, nutrition, and versatility. This recipe features the slaw as the main ingredients but its other components add more crunch and give it an Asian flare. The Crunchy Asian Slaw can make a great side for any week night dinner and is a perfect salad to serve at a gathering (I brought my most recent batch to a game day house party- Go Gators)!

After a weekend filled with heavy meals, my arteries and thighs are glad to be back home and longing for light, yet flavorful dishes. First one on the list is Shrimp Stir Fry. I have made this dinner several times and each time it varies since I don't always have the same veggie line up in the fridge. So if your ingredients don't match exactly with mine, it's ok. Any combination of veggies and protein (or tofu) can result in a beautiful Asian inspired meal and you can do it in less than 30 minutes!

 Here's a recipe that was inspired from  my love for lettuce wraps that have become a popular item on many Asian fusion restaurant menus.  It is  low fat, low calorie, and shockingly one that was derived by none other than Paula Dean! Who would have thought that the “Queen of Butter” knew how to make something so light? I added in a couple extra variations to make these Thai Shrimp Lettuce Wraps even lighter.  These make a perfect appetizer, snack, or dinner option if you're looking for a healthy and refreshing, flavorful dish for you and your guests to enjoy.
