I volunteered to make a Greek salad for a recent bridal shower I was attending and after contemplating how to make it pretty (and still accommodate 25+ guests) , I decided to go for an unconventional approach. Being that the gathering was going to be a more casual, mingling type atmosphere (with lots of finger foods), I thought it would be fun to make individual Greek salad skewers. They combine all of the elements of the salad, but with more pizazz- including a beautiful presentation. Serve these with the zesty dressing as a dipping sauce and you’ve got yourself a conversation piece for the party!

Prep Time: 20 minutes

  • Hunk of Feta (about 8 oz.), cut into 1 inch cubes
  • 1 pint of Grape Tomatoes
  • 1 Jar Kalamata Olives
  • 1 Cucumber, sliced and halved
  • 1 thick slice Red Onion, cut into one inch pieces

You will also need 5 inch skewer sticks (I picked them up at my local supermarket- I found them by the meats)

  • 1 Cup Red Wine Vinegar
  • ¾ Olive Oil
  • 2 tsp Dijon Mustard
  • Garlic Powder
  • Onion Powder
  • Dried Oregano
  • Pepper
  • Salt

  1. Create the tower by placing the cheese at the base of the skewer- the pointy side is the bottom (it will also act as the support), then sliding on a cucumber slice, an olive, a piece of onion, and then a tomato.
  2. Place each skewer onto serving platter.
  3. Prepare the dressing by combining all of the ingredients into a container with a lid. Use about 2 tsp of each seasoning
  4. Shake vigorously to mix it all together. Serve alongside skewers for dipping

Makes approximately 30 skewers

I ended up also preparing a bowl of salad with the leftover ingredients (and some romaine), just in case anyone had their heart set on the more traditional version. Plus, I had so much dressing already made, I didn’t want it to go to waste!
