I just love when fans get busy in the kitchen and make something yummy and share it with me. Samantha P. from Charlotte, NC has submitted these adorable and scrumptous Meatloaf Cupcakes. I’m excited to give them a go and hope you will be too!

This Meatloaf Cupcake Recipe was inspired by seeing this bakery, The Meatloaf Bakery, on Diners, Drive Ins, and Dives. I am on a special diet so substitutions were made for some of the ingredients, which I’ve listed, and they still came out delicious!

Ingredients:

  • 1 lb 96% lean ground beef
  • ¼ to ½ c soy rice cakes (white cheddar or plain) finely grated or breadcrumbs
  • ¼ cup egg beaters or 1 egg
  • 2 tbsp reduced fat parmesan cheese
  • 2 tsp Worcestershire sauce
  • ¼ cup sugar free ketchup or regular ketchup
  • 1 celery stalk finely chopped
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • Pam spray

Cauliflower Mashed Potatoes:

  • 1 head cauliflower
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder

Additional Condiments:

  • BBQ Sauce (Sugar free or regular)
  • Reduced fat shredded cheddar cheese

Directions:

  1. Preheat oven to 350.
  2. Mix all meatloaf ingredients together in one bowl.
  3. Spray 4 ramekins (or muffin tins) with Pam.
  4. Divide meat evenly into 4 ramekins.
  5. Bake at 350 for 25 min.
  6. Wash cauliflower and cut into small florets.
  7. Put in microwave safe bowl and cover with plastic wrap. Microwave for 10 minutes.
  8. Add salt, pepper, garlic powder and use hand mixer or other powerful mixer to mix until smooth like mashed potato consistency (You can add additional salt, pepper, garlic powder to taste).
  9. Take mini meatloaves out of ramekins and put on plate.
  10. Use Ice Cream scoop (or a ½ C measuring cup or putting mash into a big ziplock, cutting the tip and piping it onto the meatloaf would work too) to scoop cauliflower on top of meatloaves.
  11. Drizzle with BBQ Sauce and sprinkle with cheese.
